Ingredients
- 2 large chicken breasts (500g)
- 1/2 cup dill pickle juice (120 ml)
- 1/4 cup whole milk (60 ml)
- 1 tablespoon (15 ml) powdered sugar
- 1 teaspoon (5 ml) garlic powder
- 1 teaspoon (5 ml) onion powder
- 1 teaspoon (5 ml) black pepper
- 1 teaspoon (5 ml) kosher salt
- 1/4 teaspoon (1 ml) smoked paprika
- 1 cup mayonnaise (240 ml)
- 1/4 cup sweet bbq sauce (60 ml)
- 1/4 cup honey (60 ml)
- 3 tablespoons (45 ml) dijon mustard
- 1 tablespoon (15 ml) fresh squeezed lemon juice
- 1/2 teaspoon (3 ml) smoked paprika
- 4 slices beef bacon, cooked crispy
- 4 slices cheddar or Colby jack cheese
- 4 multigrain buns
- Green leaf lettuce
- Beefsteak tomato slices
Instructions
- Slice the chicken breasts lengthwise and set them aside.
- In a large mixing bowl, combine the pickle juice, milk, powdered sugar, garlic powder, onion powder, black pepper, kosher salt, and smoked paprika.
- Submerge the chicken pieces in this marinade, ensuring they are well-coated. Cover with plastic wrap and refrigerate for a minimum of 30 minutes, up to 4 hours.
- As the chicken marinates, prepare the sauce. In another bowl, blend together the mayonnaise, sweet BBQ sauce, honey, dijon mustard, lemon juice, and paprika. Cover with plastic wrap and chill until needed.
- Heat the grill to medium. Grill the chicken, turning occasionally, until the internal temperature reaches 165°F at the thickest part, about 15 minutes. Remove from heat and place a cheese slice on each piece to slightly melt.
- To assemble the sandwiches, take the tops off the buns and layer with green leaf lettuce and a beefsteak tomato slice. Place a chicken piece on top, add a cheese slice, and then a crispy bacon slice (halved to fit).
- Spread the honey BBQ sauce mixture on the underside of the top bun, place it on the sandwich, and serve immediately.
