Ingredients

  • – 2 large boneless skinless chicken breasts (900g)
  • – 1/2 cup dill pickle juice (120ml)
  • – 1/4 cup coconut milk (60ml)
  • – 1 tablespoon (15 ml) powdered sugar
  • – 1 teaspoon (5 ml) garlic powder
  • – 1 teaspoon (5 ml) onion powder
  • – 1 teaspoon (5 ml) black pepper
  • – 1 teaspoon (5 ml) sea salt
  • – 1/4 teaspoon (1 ml) smoked paprika
  • – 4 slices cheddar cheese
  • – 4 multigrain buns
  • – green leaf lettuce
  • – beefsteak tomato slices
  • – 4 slices beef bacon, cooked crispy
  • – Copycat Chick-fil-A Honey Roasted BBQ Sauce


Instructions

  1. Slice the chicken breasts in half along their length and set aside.
  2. In a mixing bowl, combine the pickle juice, coconut milk, powdered sugar, garlic powder, onion powder, black pepper, sea salt, and smoked paprika by whisking them together.
  3. Submerge the chicken pieces in this mixture, ensuring they are thoroughly coated. Cover the bowl with plastic wrap and refrigerate for a minimum of 30 minutes, and up to 4 hours.
  4. If required, prepare the Honey Roasted BBQ Sauce, cover with plastic wrap, and chill it in the refrigerator until needed.
  5. Heat the grill to medium. Grill the chicken, turning occasionally, until the thickest part reaches an internal temperature of 165°F, which should take a maximum of 15 minutes. Remove from the grill and place a slice of cheddar cheese on each chicken piece to allow it to melt slightly.
  6. To put together the sandwiches, remove the tops of the multigrain buns and place a layer of lettuce and a slice of beefsteak tomato on the bottom half. Next, add a chicken piece and a slice of beef bacon, broken in half to fit.
  7. Apply the honey-roasted BBQ sauce to the cut side of the top bun. Place the top bun onto the assembled sandwich.
