Ingredients

  • – 2 large chicken breasts, sliced into 4 thin cutlets
  • – 1 cup (240ml) coconut milk
  • – 2 eggs
  • – 2 teaspoons (10 ml) smoked paprika
  • – 1/2 teaspoon (3 ml) cayenne powder
  • – 2 teaspoons (10 ml) garlic powder
  • – 2 teaspoons (10 ml) ground black pepper
  • – 2 teaspoons (10 ml) salt
  • – 1 cup (120g) all-purpose flour
  • – 2 tablespoons (30 ml) powdered coconut milk
  • – 1 teaspoon (5 ml) granulated sugar
  • – 1 teaspoon (5 ml) baking powder
  • – vegetable oil for frying
  • – 4 hamburger buns, toasted with vegetable oil
  • – 12 dill pickle chips
  • – 4 green leaf lettuce leaves
  • – 2 large tomatoes, sliced into rings
  • – 4 slices cheddar cheese
  • – Special Sauce


Instructions

  1. In a shallow container, beat the eggs together with the coconut milk, then put this aside.
  2. In a small bowl, mix together the smoked paprika, cayenne powder, garlic powder, black pepper, and salt.
  3. In a separate container, blend the all-purpose flour with the powdered coconut milk, granulated sugar, baking powder, and the spice blend from the previous step.
  4. To achieve a crumbly texture, incorporate 2 tablespoons of the egg and milk mixture into the dry ingredients and work it with your fingers until it becomes coarse.
  5. Heat vegetable oil in a Dutch oven or deep fryer to 350°F (180°C).
  6. For coating the chicken, immerse each cutlet in the egg and milk blend, let any extra drip off, then coat it in the flour mixture, pressing down so it sticks well.
  7. Carefully shake off any surplus and gently place the cutlets in the heated oil. Repeat with the remaining chicken pieces and fry them for 4 minutes. Ensure the chicken reaches an internal temperature of 165°F (74°C). If you’re shallow frying, cook for 3-4 minutes on each side, checking the temperature with a quick-read thermometer.
  8. Place the fried chicken on a wire rack and lay cheddar cheese slices on top.
  9. For assembly, toast the burger buns and spread the special sauce on both halves. Add pickles, lettuce, two slices of tomato, the fried chicken, and cheese. Assemble the sandwich and serve it with waffle fries.
