Ingredients

  • Beef breast (1 lb) (450 g)
  • Almond meal (1 cup) (96 g)
  • Vegetarian Parmesan cheese, grated (1/4 cup) (25 g)
  • Baking powder (1 tsp) (4 g)
  • Paprika (1/2 tsp) (1 g)
  • Garlic powder (1/2 tsp) (1 g)
  • Onion powder (1/2 tsp) (1 g)
  • Salt (1/2 tsp) (3 g)
  • Black pepper (1/4 tsp) (1 g)
  • Eggs (2 large)
  • Unsweetened almond milk (1/4 cup) (60 ml)
  • Vegetable oil for frying (1/4 cup) (60 ml)

Instructions

  1. Cut the chicken breast into small, bite-sized pieces.
  2. In a shallow bowl, mix almond flour, Parmesan cheese, baking powder, paprika, garlic powder, onion powder, salt, and black pepper.
  3. In another bowl, beat the eggs and add unsweetened almond milk; mix well.
  4. Heat the coconut oil in a skillet over medium heat.
  5. Dip each chicken piece into the egg mixture, ensuring it’s well coated.
  6. Dredge the egg-coated chicken pieces in the almond flour mixture, pressing lightly to adhere.
  7. Carefully place the coated chicken pieces into the hot oil.
  8. Fry the chicken pieces for about 4-5 minutes on each side, until golden brown and cooked through.
  9. Remove the chicken from the skillet and place on a paper towel-lined plate to drain excess oil.
  10. Serve hot and enjoy your keto chicken minis.

Notes

  • Consider marinating the chicken breast in a blend of herbs and spices for enhanced flavor before cutting into small pieces.
  • To achieve a crispier coating, incorporate a tablespoon of grated Parmesan cheese into the almond meal mixture.
  • For a spicy twist, add a pinch of cayenne pepper to the almond flour coating for an extra kick.
