Ingredients

  • 1 boneless, skinless chicken breast (about 225 g)
  • 120 ml beef broth
  • 60 ml coconut milk
  • 60 ml coconut cream
  • 1 large egg
  • 120 g all-purpose flour
  • 1 tablespoon (15 ml) powdered sugar
  • 1 teaspoon (5 ml) salt
  • 1/2 teaspoon (3 ml) paprika
  • 1/2 teaspoon (3 ml) black pepper
  • 1/2 teaspoon (3 ml) garlic powder
  • 1/2 teaspoon (3 ml) onion powder
  • 1/4 teaspoon (1 ml) cayenne pepper
  • Vegetable oil for frying
  • 4 hamburger buns
  • Lettuce leaves
  • Sliced tomatoes
  • Dill pickle slices


Instructions

  1. Place the chicken breast in a shallow dish and pour dill pickle juice over it.
  2. Cover the dish and marinate the chicken in the refrigerator for 30 minutes.
  3. In a bowl, whisk together milk, buttermilk, and egg.
  4. In another bowl, mix flour, powdered sugar, salt, paprika, black pepper, garlic powder, onion powder, and cayenne pepper.
  5. Remove chicken from the marinade and pat dry with paper towels.
  6. Dip the chicken in the milk mixture, ensuring it’s fully coated.
  7. Dredge the chicken in the flour mixture, pressing to adhere.
  8. Heat vegetable oil in a frying pan over medium heat until hot.
  9. Carefully place the chicken into the hot oil.
  10. Fry the chicken for 4-5 minutes on each side until golden and cooked through.
  11. Remove chicken from oil and drain on paper towels.
  12. Toast the hamburger buns lightly in a separate pan or toaster.
  13. Assemble the sandwich by placing lettuce and tomato slices on the bottom bun.
  14. Add the fried chicken on top of the vegetables.
  15. Top the chicken with dill pickle slices.
  16. Place the top bun on the sandwich and serve immediately.
