Ingredients
- 1 boneless, skinless chicken breast (about 225 g)
- 120 ml beef broth
- 60 ml coconut milk
- 60 ml coconut cream
- 1 large egg
- 120 g all-purpose flour
- 1 tablespoon (15 ml) powdered sugar
- 1 teaspoon (5 ml) salt
- 1/2 teaspoon (3 ml) paprika
- 1/2 teaspoon (3 ml) black pepper
- 1/2 teaspoon (3 ml) garlic powder
- 1/2 teaspoon (3 ml) onion powder
- 1/4 teaspoon (1 ml) cayenne pepper
- Vegetable oil for frying
- 4 hamburger buns
- Lettuce leaves
- Sliced tomatoes
- Dill pickle slices
Instructions
- Place the chicken breast in a shallow dish and pour dill pickle juice over it.
- Cover the dish and marinate the chicken in the refrigerator for 30 minutes.
- In a bowl, whisk together milk, buttermilk, and egg.
- In another bowl, mix flour, powdered sugar, salt, paprika, black pepper, garlic powder, onion powder, and cayenne pepper.
- Remove chicken from the marinade and pat dry with paper towels.
- Dip the chicken in the milk mixture, ensuring it’s fully coated.
- Dredge the chicken in the flour mixture, pressing to adhere.
- Heat vegetable oil in a frying pan over medium heat until hot.
- Carefully place the chicken into the hot oil.
- Fry the chicken for 4-5 minutes on each side until golden and cooked through.
- Remove chicken from oil and drain on paper towels.
- Toast the hamburger buns lightly in a separate pan or toaster.
- Assemble the sandwich by placing lettuce and tomato slices on the bottom bun.
- Add the fried chicken on top of the vegetables.
- Top the chicken with dill pickle slices.
- Place the top bun on the sandwich and serve immediately.
