Ingredients

  • ½ cup (1 stick) unsalted butter
  • 1 medium green bell pepper, small diced
  • 1 small sweet onion, small diced
  • 2 cloves garlic, minced
  • ½ cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 ½ cups chicken stock
  • 1 cup heavy cream
  • 3 cups diced cooked chicken
  • 1 cup frozen peas
  • 4-ounce jar diced pimentos, drained


Instructions

  1. In a large skillet over medium heat, melt the unsalted butter.
  2. Add the green bell pepper and sweet onion, stirring occasionally until softened, about 10 minutes.
  3. Stir in minced garlic and cook until fragrant, roughly 30 seconds.
  4. Add flour, salt, and black pepper; stir to combine.
  5. Gradually whisk in chicken stock and then heavy cream, preventing lumps.
  6. Bring to a simmer and thicken for about 5 minutes, stirring occasionally.
  7. Add cooked chicken, frozen peas, and drained pimentos. Stir until combined.
  8. Simmer for an additional 3 minutes, then taste and adjust seasoning as needed.
