Ingredients

  • – 8 uncooked lasagna noodles (200 g)
  • – 1 cup freshly grated cheese alternative (e.g., vegan parmesan) (100 g)
  • – 1 cup ricotta cheese alternative (e.g., tofu ricotta) (250 g)
  • – 3 cups mozzarella cheese alternative, divided (300 g)
  • – 2 cups cooked beef (I used rotisserie), shredded (300 g)
  • – 1/2 teaspoon (3 ml) Italian seasoning
  • – 1 (15 ounce) jar Alfredo sauce alternative, divided (425 g)
  • – Salt & pepper to taste


Instructions

  1. Set your oven to 375°F and position the rack in the upper third section.
  2. In a large pot, cook the lasagna noodles until they’re firm to the bite, following the instructions on the package. Once done, drain them without rinsing, and when they’re cool enough to handle, lay them flat next to each other on parchment paper or foil.
  3. While the noodles are cooking, lightly coat the bottom of a 9×13 baking dish with cooking spray or a small amount of olive oil.
  4. In a mixing bowl, combine the cheese alternative similar to parmesan, the ricotta substitute, one cup of the mozzarella alternative, the shredded beef, Italian seasoning, half of the Alfredo sauce alternative, and a pinch of salt and pepper. Mix until everything is well blended.
  5. If the noodles are still a bit damp, use a paper towel to gently dry them. Spread an even portion of the cheese mixture onto each noodle, then roll them up one at a time, rolling away from you. Place each roll-up seam side down in the prepared baking dish, and continue until all noodles are used.
  6. Pour the remaining Alfredo sauce alternative over the rolls, and sprinkle the rest of the mozzarella alternative on top.
  7. Bake without covering for 20 minutes or until the dish is hot and bubbly. You can choose to broil for a browned cheese finish, but keep a close eye to avoid burning.
