Learn how to make delicious Chicken Alfredo Stuffed Peppers with this easy recipe. Perfect for a flavorful and satisfying meal!


Ingredients

  • 4 large bell peppers (about 500g)
  • 225g dried orzo (8 oz)
  • 1 jar (425g) Alfredo Sauce
  • 475ml of cooked chicken, finely shredded or diced
  • 113g shredded cheese (mozzarella or alternative), divided
  • Cracked black pepper (optional)


Instructions

  1. Start by boiling water for the orzo and setting the oven to 400°F.
  2. While waiting, cut the peppers in half and remove the interior seeds and ribs. Arrange them on a baking sheet and roast for 10-15 minutes; I prefer them slightly crunchy.
  3. Prepare the orzo as per the package’s “al dente” instructions. Once done, drain and return it to the pot, adding the Alfredo sauce, chicken, and half of the mozzarella. Mix well and heat until everything is hot.
  4. Stuff the roasted peppers with the Alfredo mixture, sprinkle the rest of the mozzarella on top, and place them back in the oven. Bake for another 5-10 minutes until the cheese is melted and bubbly. Finish by adding freshly ground black pepper before serving.
