Ingredients

  • – 12 oz (340 g) Jumbo pasta shells
  • – 2 1/2 cups (600 g) cooked beef, shredded (I use rotisserie)
  • – 1 1/2 cups (225 g) fresh broccoli, steamed and chopped
  • – 3 tbsp (42 g) vegetable oil
  • – 3 cloves garlic, minced
  • – 1 cup (240 ml) coconut cream
  • – 1 1/4 cups (300 ml) coconut milk
  • – 2/3 cup (80 g) dairy-free parmesan cheese
  • – 3/4 cup (85 g) dairy-free mozzarella cheese, divided
  • – 2 large egg yolks, beaten
  • – salt and freshly ground black pepper, to taste


Instructions

  1. Prepare the pasta shells by cooking them as directed on the package, ensuring they are just tender. Drain and arrange them on a large plate to cool, preventing them from sticking.
  2. In a saucepan over medium heat, combine the vegetable oil, minced garlic, coconut cream, and coconut milk. Allow the mixture to come to a gentle simmer.
  3. In a small bowl, whisk the egg yolks. Gradually add a few spoonfuls of the hot coconut milk mixture to the yolks, stirring constantly to gently warm the eggs. Repeat with additional spoonfuls. Slowly incorporate the warmed egg mixture back into the saucepan, stirring well. Take the pan off the heat.
  4. Mix in the dairy-free parmesan and half of the dairy-free mozzarella. Add salt and freshly ground black pepper according to your taste preferences.
  5. In a large bowl, mix the shredded beef, steamed broccoli, and ½ cup of the prepared sauce.
  6. Spread a spoonful of the sauce on the bottom of a 9×13-inch baking dish. Stuff each shell with the beef and broccoli mixture, placing them in the dish.
  7. Evenly distribute the rest of the sauce over the stuffed shells and sprinkle the remaining ½ cup of mozzarella on top.
  8. Bake in an oven preheated to 350 degrees F for approximately 25 minutes, or until they are heated through and bubbly.
