Ingredients

  • – 2 medium zucchini, sliced and center removed (about 300g)
  • – 3 cups cooked beef (about 450g)
  • – 1 cup low carb Alfredo sauce (240 ml)
  • – 1 cup shredded mozzarella cheese, divided (about 100g)
  • – 1 teaspoon (5 ml) Italian seasoning


Instructions

  1. Preheat your oven to 400°F.
  2. Slice the zucchini lengthwise and hollow out the middle to form boat-like shapes. Arrange them in a baking dish.
  3. Combine the cooked beef, Alfredo sauce, and half of the mozzarella cheese in a bowl, then fill the zucchini boats with this mixture. Sprinkle the remaining mozzarella on top.
