Ingredients
- – 2 medium zucchini, sliced and center removed (about 300g)
- – 3 cups cooked beef (about 450g)
- – 1 cup low carb Alfredo sauce (240 ml)
- – 1 cup shredded mozzarella cheese, divided (about 100g)
- – 1 teaspoon (5 ml) Italian seasoning
Instructions
- Preheat your oven to 400°F.
- Slice the zucchini lengthwise and hollow out the middle to form boat-like shapes. Arrange them in a baking dish.
- Combine the cooked beef, Alfredo sauce, and half of the mozzarella cheese in a bowl, then fill the zucchini boats with this mixture. Sprinkle the remaining mozzarella on top.
- Place in the oven and cook for 20-25 minutes or until the zucchini is easily pierced with a fork. Optionally, garnish with Italian seasoning and a touch of parmesan cheese.
