Ingredients
- 2 cups cooked shredded chicken
- 1 cup uncooked rice
- 3 cups chicken broth
- 1 cup mixed vegetables (carrots, peas, corn)
- 1 can cream of chicken soup
- 1 cup shredded cheese (like cheddar)
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the cooked shredded chicken, uncooked rice, chicken broth, mixed vegetables, cream of chicken soup, onion powder, garlic powder, salt, and pepper in a large bowl.
- Pour the mixture into a greased 9×13 inch baking dish.
- Cover with foil and bake for 45 minutes.
- Remove the foil, sprinkle the shredded cheese on top, and bake uncovered for an additional 15 minutes, or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving. Enjoy!

Using leftover chicken saves time and enhances flavor. Letting the casserole sit after baking allows it to set for easier serving.
