Ingredients
- 2 cups cooked rice
- 1 pound boneless, skinless chicken breasts
- 1 can cream of chicken soup
- 1 cup chicken broth
- 1 cup mixed vegetables (like peas and carrots)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Optional toppings: shredded cheese, breadcrumbs, or fresh herbs
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the cooked rice, cream of chicken soup, chicken broth, and mixed vegetables. Season the mixture with garlic powder, onion powder, salt, and pepper.
- Place the boneless chicken breasts on top of the rice mixture in a greased baking dish. Spread the rice mixture evenly around the chicken.
- Cover the dish with aluminum foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15-20 minutes, or until the chicken is thoroughly cooked and the top is golden.
Notes
Let the casserole rest for a few minutes after baking to allow flavors to meld. If the rice feels dry, add a little more broth or cream.
