Ingredients

  • 2 cups cooked rice
  • 1 pound boneless, skinless chicken breasts
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup mixed vegetables (like peas and carrots)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, breadcrumbs, or fresh herbs


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the cooked rice, cream of chicken soup, chicken broth, and mixed vegetables. Season the mixture with garlic powder, onion powder, salt, and pepper.
  3. Place the boneless chicken breasts on top of the rice mixture in a greased baking dish. Spread the rice mixture evenly around the chicken.
  4. Cover the dish with aluminum foil and bake for 45 minutes.
  5. Remove the foil and bake for an additional 15-20 minutes, or until the chicken is thoroughly cooked and the top is golden.

Notes

Let the casserole rest for a few minutes after baking to allow flavors to meld. If the rice feels dry, add a little more broth or cream.
