A warm and comforting chicken and spinach casserole enriched with creamy cheeses, perfect for family gatherings.
Ingredients
- 2 cups cooked chicken breast, shredded or diced
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 4 cups fresh spinach, chopped
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 tsp dried Italian seasoning
- 1/2 tsp paprika
- Salt and pepper, to taste
- 1/2 cup shredded mozzarella cheese (for topping)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Grease a medium-sized casserole dish with olive oil.
- Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onion and cook until softened, about 3-4 minutes.
- Add the garlic and cook for another minute until fragrant.
- Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat.
- In a large mixing bowl, combine the cream cheese, sour cream, 1/2 cup mozzarella, Parmesan, Italian seasoning, paprika, salt, and pepper. Mix until creamy.
- Fold in the chicken and sautéed spinach until evenly coated.
- Transfer the mixture to the prepared casserole dish, spreading it evenly.
- Sprinkle the remaining mozzarella on top.
- Bake for 20-25 minutes, or until bubbly and golden.
- Garnish with fresh parsley and allow to cool slightly before serving.
Notes
For extra flavor, add a squeeze of lemon juice to the mixture. Consider adding breadcrumbs for a crunchy topping.
