Description

A warm and comforting chicken and spinach casserole enriched with creamy cheeses, perfect for family gatherings.


Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups fresh spinach, chopped
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp dried Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1/2 cup shredded mozzarella cheese (for topping)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat your oven to 375°F (190°C). Grease a medium-sized casserole dish with olive oil.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onion and cook until softened, about 3-4 minutes.
  3. Add the garlic and cook for another minute until fragrant.
  4. Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat.
  5. In a large mixing bowl, combine the cream cheese, sour cream, 1/2 cup mozzarella, Parmesan, Italian seasoning, paprika, salt, and pepper. Mix until creamy.
  6. Fold in the chicken and sautéed spinach until evenly coated.
  7. Transfer the mixture to the prepared casserole dish, spreading it evenly.
  8. Sprinkle the remaining mozzarella on top.
  9. Bake for 20-25 minutes, or until bubbly and golden.
  10. Garnish with fresh parsley and allow to cool slightly before serving.

Notes

For extra flavor, add a squeeze of lemon juice to the mixture. Consider adding breadcrumbs for a crunchy topping.
