A comforting chicken and spinach casserole that combines creamy cheese and vibrant spinach for a delightful family meal.
Ingredients
- 2 cups cooked chicken breast, shredded or diced
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 4 cups fresh spinach, chopped
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 tsp dried Italian seasoning
- 1/2 tsp paprika
- Salt and pepper, to taste
- 1/2 cup shredded mozzarella cheese (for topping)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Grease a medium-sized casserole dish.
- In a skillet, heat the olive oil over medium heat. Add the onion and cook until softened, about 3-4 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Introduce the chopped spinach to the skillet and cook until wilted, about 2 minutes. Remove from heat and set aside.
- In a large mixing bowl, combine the softened cream cheese, sour cream, 1/2 cup of shredded mozzarella, Parmesan cheese, Italian seasoning, paprika, salt, and pepper. Stir until well mixed and creamy.
- Fold in the shredded chicken and the sautéed spinach mixture, stirring to coat evenly with the creamy mixture.
- Transfer this mixture to the prepared casserole dish.
- Sprinkle the remaining 1/2 cup of shredded mozzarella cheese on top.
- Bake in the preheated oven for 20-25 minutes, or until bubbly and golden on top.
- Remove from the oven and garnish with fresh parsley. Allow to cool slightly before serving.
Notes
For added flavor, consider using roasted chicken instead of plain cooked chicken. You can also include other vegetables like bell peppers or mushrooms.
