Ingredients

  • 10 oz (283 g) package of frozen spinach, thawed
  • 1 – 15 oz (425 g) tub ricotta cheese
  • 1-1/2 cups (360 ml) shredded rotisserie chicken
  • 2 – 1/2 cups (120 ml) shredded beef mozzarella cheese
  • 2/3 cup (160 ml) shredded cheese
  • 1 large egg
  • 12 lasagna noodles
  • 1 – 14.5 oz (411 g) jar alfredo sauce
  • 2 cups (480 ml) shredded beef mozzarella cheese


Instructions

  1. Cook the lasagna noodles following the package instructions.
  2. After cooking, drain the noodles and let them cool until they are comfortable to handle.
  3. Set your oven to 375 degrees Fahrenheit to preheat.
  4. Combine thawed spinach, ricotta, 1 and ½ cups of mozzarella, shredded cheese, egg, and shredded chicken in a bowl and mix well. Set aside.
  5. Once the noodles are cool enough, place them flat on parchment paper on a clean surface.
  6. Evenly spread ¼ cup of the spinach and cheese mixture along each noodle.
  7. Roll each noodle from one end to the other.
  8. Pour 1 cup of alfredo sauce into the bottom of a 9 x 13-inch baking dish.
  9. Arrange the rolled noodles in the baking dish and cover them with the remaining alfredo sauce. Sprinkle the rest of the mozzarella on top.
  10. Bake in the oven for 25 minutes or until thoroughly heated.
