Ingredients
- 10 oz (283 g) package of frozen spinach, thawed
- 1 – 15 oz (425 g) tub ricotta cheese
- 1-1/2 cups (360 ml) shredded rotisserie chicken
- 2 – 1/2 cups (120 ml) shredded beef mozzarella cheese
- 2/3 cup (160 ml) shredded cheese
- 1 large egg
- 12 lasagna noodles
- 1 – 14.5 oz (411 g) jar alfredo sauce
- 2 cups (480 ml) shredded beef mozzarella cheese
Instructions
- Cook the lasagna noodles following the package instructions.
- After cooking, drain the noodles and let them cool until they are comfortable to handle.
- Set your oven to 375 degrees Fahrenheit to preheat.
- Combine thawed spinach, ricotta, 1 and ½ cups of mozzarella, shredded cheese, egg, and shredded chicken in a bowl and mix well. Set aside.
- Once the noodles are cool enough, place them flat on parchment paper on a clean surface.
- Evenly spread ¼ cup of the spinach and cheese mixture along each noodle.
- Roll each noodle from one end to the other.
- Pour 1 cup of alfredo sauce into the bottom of a 9 x 13-inch baking dish.
- Arrange the rolled noodles in the baking dish and cover them with the remaining alfredo sauce. Sprinkle the rest of the mozzarella on top.
- Bake in the oven for 25 minutes or until thoroughly heated.
