Ingredients
- 2 large chicken breasts, cut into strips (500g)
- 1 medium onion, diced (150g)
- 2 tablespoons (30 ml) vegetable oil
- One – 14 1/2 oz (410g) can diced tomatoes, undrained
- 60ml water
- 1 teaspoon (5 ml) dried basil
- 1/2 teaspoon (3 ml) dried oregano
- 1/2 teaspoon (3 ml) pepper
- 1/2 teaspoon (3 ml) salt
- 1/2 teaspoon (3 ml) garlic powder
- 1 cup baby spinach, packed tight (30g)
Instructions
- Pour the vegetable oil into a skillet and heat over medium-high flame. Introduce the chicken strips, stir and cook until they are golden, approximately 10 minutes.
- Incorporate the chopped onion into the skillet, cooking until it becomes tender.
- Pour in the undrained canned tomatoes, water, and all the spices, stirring as you bring the mixture to a boil.
- Lower the heat to a gentle simmer, cover, and let it cook for around 5 minutes.
- Add the baby spinach to the skillet, stirring until it starts to wilt.
- Serve the dish atop long grain rice prepared in chicken broth.
