Description

Ingredients

  • 2 large chicken breasts, cut into strips (500g)
  • 1 medium onion, diced (150g)
  • 2 tablespoons (30 ml) vegetable oil
  • One – 14 1/2 oz (410g) can diced tomatoes, undrained
  • 60ml water
  • 1 teaspoon (5 ml) dried basil
  • 1/2 teaspoon (3 ml) dried oregano
  • 1/2 teaspoon (3 ml) pepper
  • 1/2 teaspoon (3 ml) salt
  • 1/2 teaspoon (3 ml) garlic powder
  • 1 cup baby spinach, packed tight (30g)


Instructions

  1. Pour the vegetable oil into a skillet and heat over medium-high flame. Introduce the chicken strips, stir and cook until they are golden, approximately 10 minutes.
  2. Incorporate the chopped onion into the skillet, cooking until it becomes tender.
  3. Pour in the undrained canned tomatoes, water, and all the spices, stirring as you bring the mixture to a boil.
  4. Lower the heat to a gentle simmer, cover, and let it cook for around 5 minutes.
  5. Add the baby spinach to the skillet, stirring until it starts to wilt.
  6. Serve the dish atop long grain rice prepared in chicken broth.
