Ingredients

  • 1 Tbsp vegetable oil (15ml)
  • 500g chicken breast
  • 1/2 head of broccoli
  • 1/2 cauliflower
  • 2 carrots, peeled and sliced
  • 1 cup edamame beans, thawed (125g)
  • 30g slivered almonds, toasted
  • 1/4 cup soy sauce (60ml)
  • 2 Tbsp (30 ml) sweet chili sauce
  • 1 Tbsp (15 ml) honey
  • 1 Tbsp (15 ml) sesame oil
  • 1 Tbsp (15 ml) cornflour
  • 1 tsp (5 ml) crushed garlic
  • 1 tsp (5 ml) crushed ginger


Instructions

  1. Combine all the ingredients for the sauce in a small pitcher and whisk them together. Set aside until needed.
  2. Warm the oil in a large nonstick skillet over medium heat. Slice the chicken into 1cm thick pieces and cook for a few minutes on each side. Set aside while preparing the vegetables.
  3. Chop the broccoli and cauliflower into small, manageable pieces. Place them in the skillet with a little water and stir-fry for three minutes.
  4. Include the carrots and edamame beans, and continue stir-frying for an additional two minutes. Return the cooked chicken to the skillet.
  5. Drizzle the stir-fry sauce over everything and blend well. Let it simmer, stirring occasionally, for 3 to 5 minutes until thoroughly heated and cooked.
  6. Sprinkle the toasted slivered almonds over the dish and serve right away atop steamed rice or noodles.

Notes

  • Use olive oil instead of vegetable oil for a healthier option with added flavor.
  • Toast slivered almonds beforehand to enhance their nutty taste and crunchy texture.
  • Add bell peppers or snap peas to boost the dish’s nutritional value. Adjust sweetness and spiciness by varying honey and sweet chili sauce amounts.
