  • – 3 tablespoons (45 ml) vegetable oil
  • – 3 cloves garlic minced
  • – 1 ½ cups (360 ml) milk
  • – ¼ cup (60 ml) lemon juice
  • – 1 cup (240 ml) shredded cheese (halal-friendly) plus more for topping


Instructions

  2. Start by making your lemon sauce. Place 3 tablespoons of vegetable oil in a large pan and heat over medium until fully warmed.
  3. Introduce the minced garlic, stirring and cooking until it is aromatic, roughly one minute, then incorporate the lemon juice.
  4. Pour in the milk and allow it to reach a simmering state.
  5. Mix in 1 cup of shredded cheese, stirring until it has completely melted.
  6. To assemble your bake, coat a 9×13 baking dish with non-stick spray. Spread the cooked quinoa evenly across the bottom.
