- – 3 tablespoons (45 ml) vegetable oil
- – 3 cloves garlic minced
- – 1 ½ cups (360 ml) milk
- – ¼ cup (60 ml) lemon juice
- – 1 cup (240 ml) shredded cheese (halal-friendly) plus more for topping
Instructions

- Start by making your lemon sauce. Place 3 tablespoons of vegetable oil in a large pan and heat over medium until fully warmed.
- Introduce the minced garlic, stirring and cooking until it is aromatic, roughly one minute, then incorporate the lemon juice.
- Pour in the milk and allow it to reach a simmering state.
- Mix in 1 cup of shredded cheese, stirring until it has completely melted.
- To assemble your bake, coat a 9×13 baking dish with non-stick spray. Spread the cooked quinoa evenly across the bottom.
- Layer the shredded beef on top of the quinoa.
- Place the steamed broccoli and carrots over the beef.
