Description
A simple and flavorful chicken and veggie sheet pan dinner that brings the whole family together with minimal cleanup.
Ingredients
- 1 ½ lbs boneless, skinless chicken breasts
- 1 bell pepper, chopped into 3/4-inch pieces
- 1 zucchini, chopped into 3/4-inch pieces
- 1 yellow squash, chopped into 3/4-inch pieces
- 1 ½ cups broccoli florets
- ½ yellow onion, chopped into 3/4-inch pieces
- 3 tbsp olive oil
- 1 tsp Italian seasoning
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp black pepper
- 1 tsp paprika
Instructions
- Preheat your oven to 400℉.
- Prepare your baking sheet by lining it with parchment paper.
- Combine the chicken breasts and all the chopped vegetables in a large bowl.
- Drizzle the olive oil over everything in the bowl.
- Sprinkle the Italian seasoning, onion powder, garlic powder, black pepper, and paprika over the ingredients.
- Stir until every piece is coated.
- Transfer the chicken and veggies to the prepared baking sheet, spreading them evenly.
- Bake for 20-25 minutes until the chicken reaches an internal temperature of 165° and the vegetables are tender.
Notes
For added flavor, marinate the chicken beforehand and consider squeezing fresh lemon juice before serving.
