Ingredients

  • 1 Tbsp vegetable oil (15ml)
  • 500g chicken breast
  • 1/2 head of broccoli
  • 1/2 cauliflower
  • 2 carrots, peeled and sliced
  • 1 cup edamame beans, thawed (125g)
  • 30g slivered almonds, toasted
  • ¼ cup soy sauce (60ml)
  • 2 Tbsp (30 ml) sweet chili sauce
  • 1 Tbsp (15 ml) honey
  • 1 Tbsp (15 ml) sesame oil
  • 1 Tbsp (15 ml) cornstarch
  • 1 tsp (5 ml) crushed garlic
  • 1 tsp (5 ml) crushed ginger


Instructions

  1. Combine all the ingredients for the stir-fry sauce in a small pitcher and blend well. Keep it aside until needed.
  2. Warm the oil in a large non-stick skillet over medium heat. Slice the chicken into 1 cm thick pieces and sauté for a few minutes on each side. Take out the chicken while you prepare the veggies.
  3. Chop the broccoli and cauliflower into small pieces. Place them in the skillet with a splash of water and cook while stirring for three minutes.
  4. Include the carrots and edamame beans and continue to stir-fry for an additional two minutes. Return the cooked chicken to the pan.
  5. Drizzle the stir-fry sauce over the mixture and combine everything thoroughly. Let it cook, stirring now and then, for 3 to 5 minutes until heated and thoroughly cooked.
  6. Sprinkle the toasted slivered almonds on top and serve instantly over hot rice or noodles.
