Ingredients
- 1 tablespoon olive oil (15 ml)
- 2 (225 g) zucchinis, thinly sliced
- 2 large peeled carrots, chopped
- 1 cup (240 ml) chopped yellow onion
- 2 cans cream of chicken soup
- 1 cup (240 ml) sour cream
- 2 tablespoon (30 ml) finely chopped fresh tender herbs, such as parsley, tarragon, and basil, plus more
- 1 teaspoon (5 ml) kosher salt
- 1 teaspoon (5 ml) black pepper
- 4 cups (960 ml) shredded cooked chicken breasts
- 4 ounces (113 g) Cheddar cheese, shredded
- 1 1/4 cups (300 ml) panko breadcrumbs
- 2 1/2 tablespoon (38 ml) vegetable oil, melted
Instructions
- Collect all the necessary items. Set your oven to 350 degrees F (175 degrees C) to preheat. Lightly coat a 9×13-inch baking dish with a nonstick spray and set it aside.
- Warm the oil in a large nonstick pan over medium-high heat. Add the zucchini slices, carrots, and onion. Stir occasionally and cook until the veggies are tender, which should take around 10 minutes. Take the pan off the heat and put it aside.
- In a large bowl, mix together the cream of chicken soup, sour cream, herbs, salt, and black pepper until smooth and uniform. Gently mix in the chicken and the cooked veggies until everything is well covered with the creamy mixture. Move this mixture to the prepared baking dish and spread it out evenly. Sprinkle the shredded Cheddar on top.
- In a small bowl, combine the panko and melted vegetable oil until well mixed. Evenly distribute this over the top of the casserole.
- Place the dish in the preheated oven and bake until the Cheddar cheese is melted, the chicken mixture is bubbling at the edges, and the panko is golden brown, about 45 minutes. Decorate with more fresh herbs before serving. Recipe by Amanda Holstein.
