Description

A delicious and colorful sheet pan dinner featuring chicken apple sausage, baby potatoes, and roasted vegetables, perfect for weeknight meals or gatherings.


Ingredients

  • 4 chicken apple sausages
  • 24 oz baby potato medley
  • 1 cup baby carrots
  • 2 small or 1 large broccoli crown
  • 3 tbsp olive oil
  • 3 tbsp pure maple syrup
  • 1 1/2 tsp garlic powder
  • 1 1/2 tsp onion powder
  • 1/4 tsp paprika
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 400 degrees.
  2. Chop the baby potatoes and broccoli into bite-sized pieces. Slice the chicken sausage into rounds.
  3. Toss the chopped potatoes and carrots with 2 tbsp olive oil, 1 tsp garlic powder, 1 tsp onion powder, the paprika, salt, and pepper in a large bowl.
  4. Spread the potato and carrot mixture on a large sheet pan.
  5. Roast for 20 minutes, mixing halfway through to ensure even browning.
  6. Mix the chopped broccoli with 1 tbsp olive oil, 1/2 tsp garlic powder, 1/2 tsp onion powder, salt, and pepper in a separate bowl.
  7. Remove the sheet pan from the oven and move the potatoes and carrots to one side to make space for the broccoli. Spread the broccoli on the other side.
  8. Roast for an additional 10 minutes.
  9. Add the sliced chicken sausage to the pan and roast for 20 minutes, mixing halfway through.
  10. Drizzle the maple syrup over the broccoli, potatoes, and carrots, and adjust seasoning.
  11. Mix everything together and roast for the last 10 minutes until beautifully caramelized.
  12. Serve hot and enjoy!

Notes

For crispier edges, place the pan on the top oven rack for part of the cooking process. Experiment with different vegetables for variety.
