Ingredients
- 2 large cooked chicken breasts, shredded or chopped (600g)
- 2 large avocados (320g)
- 1 cup corn, from 1 cooked cob (240ml)
- 6 oz beef bacon, cooked and chopped (170g)
- 1/4 cup Chives (or green onion), chopped (15g)
- 2 Tbsp Dill, chopped, or to taste (6g)
- 2 hard-boiled eggs, optional, halved or quartered
- 3 Tbsp lemon juice, freshly squeezed (45ml)
- 3 Tbsp vegetable oil (45ml)
- 1 tsp (5 ml) sea salt, or to taste
- 1/8 tsp (1 ml) black pepper
Instructions
- Chop or shred the cooked chicken breasts and transfer them to a large bowl.
- Remove the skin and seed from the avocados, cut them into small chunks, and add them to the bowl.
- Incorporate the corn, diced beef bacon, chives, and dill into the bowl.
- Prepare the dressing by mixing the ingredients in a separate small bowl until well blended. Pour the dressing over the salad and mix everything together. Optionally, serve with slices of hard-boiled egg on top.
