A low-carb comfort meal featuring tender chicken, crispy bacon, and creamy ranch sauce, served in a bowl with cauliflower rice.
Ingredients
- 10 oz frozen steam-in-bag cauliflower rice
- 4 cups cooked shredded chicken
- 6 slices bacon, fried and crumbled
- 4 oz cream cheese
- ½ cup sour cream
- 1 packet ranch dressing seasoning
- 2 cups shredded cheddar cheese
- Chopped parsley for garnish
Instructions
- Steam the cauliflower rice according to package instructions, then set aside.
- In a skillet, fry the bacon until crisp, drain on paper towels, and crumble. Set this aside for topping later.
- In the same skillet over medium heat, melt cream cheese and sour cream together, stirring until smooth.
- Stir in ranch seasoning and add shredded cheddar cheese, mixing until melted and well combined.
- Add the shredded chicken and steamed cauliflower rice to the skillet, tossing them in the creamy sauce until completely coated.
- Mix in half of the crumbled bacon, stirring until heated through.
- Serve by dividing the mixture into bowls and topping with the remaining bacon and chopped parsley.
Notes
Use freshly shredded chicken for better texture and flavor. Adjust ranch seasoning to taste.
