Description

Delicious chicken burritos filled with vibrant bell peppers, creamy ranch dressing, and gooey cheddar cheese, perfect for family dinners.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breast, thinly sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1 cup cooked rice
  • 4 large flour tortillas
  • 1/4 cup chopped fresh cilantro (optional)


Instructions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the sliced chicken breast to the skillet and season with garlic powder, onion powder, smoked paprika, chili powder, salt, and pepper.
  3. Cook the chicken for about 5-7 minutes, ensuring it turns golden brown and is cooked through.
  4. Stir in the sliced bell peppers and sauté for an additional 3-4 minutes until tender.
  5. Meanwhile, warm the flour tortillas until they are soft and pliable.
  6. Layer each tortilla with cooked rice, the chicken mixture, bell peppers, ranch dressing, and shredded cheddar cheese.
  7. Roll up the burritos tightly, folding in the sides as you go.
  8. Optionally, toast the burritos seam-side down in a skillet for a crispy finish.
  9. If desired, garnish with chopped cilantro before serving.

Notes
