Ingredients

  • – 8 ounces (227 g) uncooked pasta, penne
  • – 4 cups (600 g) broccoli florets
  • – 2 cups (280 g) cooked beef, shredded or chopped
  • – 1 (15 ounce (425 g)) jar Alfredo sauce
  • – 1/2 teaspoon (3 ml) Italian seasoning
  • – 1/2 cup (50 g) shredded Parmesan-style cheese
  • – 2 cups (200 g) dairy-free mozzarella, shredded
  • – Salt & pepper to taste


Instructions

  1. Set your oven to 375°F, placing the rack in the upper third section.
  2. Bring a large pot of salted water to a boil, then cook the pasta for one minute less than the instructions suggest. Add broccoli into the pot two minutes before the pasta finishes cooking. Drain and move them to a 9×13 baking dish.
  3. Combine the beef, Alfredo sauce, Parmesan-style cheese, and Italian seasoning with the pasta and broccoli in the dish, mixing thoroughly.
  4. Spread the mixture evenly, then sprinkle the shredded mozzarella on top.
  5. Put it in the oven, uncovered, and bake for 15-20 minutes until it becomes hot and bubbly. If desired, broil briefly to brown the cheese, keeping a close eye to prevent burning. Add salt and pepper to your liking, then serve right away.
