Ingredients
- – 2 Tablespoons (30 ml) vegetable oil
- – 2 boneless skinless chicken breasts, or 2 cups (480 ml) diced cooked beef
- – 1 teaspoon (5 ml) Italian Seasoning
- – Salt/Pepper, to taste
- – 2 1/2 cups (590 ml) chicken broth
- – 1 Tablespoon (15 ml) olive oil
- – 1 1/4 cups (235 g) white long grain rice, uncooked
- – 2-3 cups (300-450 g) fresh broccoli florets, uncooked
- – 10.5 oz. (300 g) Condensed Cream of Mushroom Soup
- – 1/2 cup (120 ml) milk
- – 1/2 cup (120 ml) coconut cream
- – 2 cups (225 g) shredded mozzarella cheese, separated
- – 1/2 teaspoon (3 ml) dried thyme
- – 1/2 teaspoon (3 ml) garlic powder
- – 1 cup (100 g) crushed breadcrumbs
- – 2 Tablespoons (30 ml) melted butter
Instructions
- Set your oven to 350° F to preheat it.
- Dice the chicken into small pieces, then sprinkle with Italian seasoning, salt, and pepper to your liking.
- In a large pot, warm up the vegetable oil over medium heat until hot, then brown the chicken evenly on all sides for about 5 minutes. Take out the chicken and set it aside. (Skip this if using pre-cooked beef.)
- Combine chicken broth, olive oil, and rice in the pot and bring to a boil, then lower the heat to let it simmer.
- Cover the pot snugly and let it cook for 6 minutes.
- Add the broccoli, cover once more, and continue cooking for 9 minutes, or until the rice has absorbed all the liquid. (If needed, cover and cook an additional 5 minutes until done.)
- Take the pot off the heat and leave covered for 10 minutes without stirring, allowing the rice to settle and release from the bottom.
- Stir in the cooked chicken, condensed cream of mushroom soup, milk, coconut cream, half of the mozzarella, and season with dried thyme and garlic powder.
- Move the mixture into a greased 9 x 13 casserole dish and sprinkle the remaining mozzarella on top.
- Cover the dish with foil and bake for 15 minutes.
- Mix melted butter with crushed breadcrumbs to create a topping.
- Scatter the breadcrumb mixture over the casserole and bake without covering for another 10 minutes.
- Allow the dish to rest for 5 minutes before serving.
