Ingredients
- – 500g (1 lb) chicken breast, thinly sliced (or boneless thighs, do not tenderize)
- – 1 1/2 tsp (8 ml) baking soda / bi-carb soda
- – 2 tbsp (30 ml) cornflour / cornstarch
- – 3 tbsp (45 ml) light soy sauce, or all-purpose soy
- – 1 1/2 tbsp (23 ml) beef broth (shaoxing wine) or Mirin
- – 3 tbsp (45 ml) vegetarian oyster sauce
- – 2 tsp (10 ml) sesame oil, toasted
- – Dash of black pepper
- – 2 tbsp (30 ml) vegetable oil
- – 1/2 onion, sliced
- – 2 garlic cloves, finely minced with knife
- – 400g (14 oz) broccoli florets, broken/cut into small bite-size pieces (2 medium heads, ~5 cups)
- – 1 1/4 cups (300 ml) water
- – White rice or other rice of choice
Instructions
- Prepare the chicken by using the tenderizing method suggested, if you’re using breast meat. This step is not necessary for thighs.
- For the broccoli, choose your preferred method to steam or boil it until it reaches your desired level of doneness, as it won’t soften further during stir-frying. A common approach is to microwave-steam it for three minutes on high. Ensure it’s well-drained to prevent the sauce from becoming watered down.
- Create the sauce by first combining the cornflour with the soy sauce until smooth and free of lumps. Then, incorporate the rest of the ingredients.
- Warm the oil in a large skillet over high heat. Introduce the garlic and onion, cooking them for about 10 seconds until the garlic begins to turn golden in color.
- Add the chicken pieces to the skillet, cooking them for approximately 2 minutes or until they are fully cooked through.
- Pour in the broccoli, sauce, and water, ensuring all are well-mixed. Cook for 1 to 2 minutes until the sauce thickens, takes on a glossy appearance, and coats everything nicely.
- Serve the dish over your choice of rice!

- Ensure the chicken is cooked just until done to maintain tenderness.
- Thoroughly drain broccoli to avoid diluting the sauce with excess water.
