Ingredients
- 2 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 cups cooked pasta (such as penne or fusilli)
- 2 cups diced tomatoes
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Balsamic glaze (optional) for topping
Instructions
- Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat, then add the chicken. Cook for 6-7 minutes on each side or until cooked through. Remove from skillet and let it rest before slicing.
- In the same skillet, add garlic and sauté until fragrant. Add diced tomatoes and cook for 3-4 minutes until slightly softened. Stir in fresh basil and season with salt and pepper.
- Combine the cooked pasta with the tomato basil mixture. Slice the chicken and place it on top.
- Drizzle with balsamic glaze if desired and serve.
