Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 cups cooked pasta (such as penne or fusilli)
  • 2 cups diced tomatoes
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Balsamic glaze (optional) for topping


Instructions

  1. Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat, then add the chicken. Cook for 6-7 minutes on each side or until cooked through. Remove from skillet and let it rest before slicing.
  2. In the same skillet, add garlic and sauté until fragrant. Add diced tomatoes and cook for 3-4 minutes until slightly softened. Stir in fresh basil and season with salt and pepper.
  3. Combine the cooked pasta with the tomato basil mixture. Slice the chicken and place it on top.
  4. Drizzle with balsamic glaze if desired and serve.
