Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup salsa
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 avocado, diced
- 1/4 cup cilantro lime dressing
- 1 cup cooked rice or quinoa (optional)
- Fresh cilantro, for garnish
Instructions
- Place the chicken breasts in the crockpot and cover with salsa.
- Cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
- Shred the chicken using two forks.
- In a serving bowl, combine shredded chicken with black beans, corn, and diced avocado.
- Optionally, serve over rice or quinoa.
- Drizzle with cilantro lime dressing and garnish with fresh cilantro.
- Serve warm.
