Description

A vibrant and customizable chicken burrito bowl that combines protein, fiber, and healthy fats for a nutritious dinner.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup salsa
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 avocado, diced
  • 1/4 cup cilantro lime dressing
  • 1 cup cooked rice or quinoa (optional)
  • Fresh cilantro, for garnish


Instructions

  1. Place the chicken breasts in the crockpot and cover with salsa.
  2. Cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
  3. Shred the chicken using two forks.
  4. In a serving bowl, combine shredded chicken with black beans, corn, and diced avocado.
  5. Optionally, serve over rice or quinoa.
  6. Drizzle with cilantro lime dressing and garnish with fresh cilantro.
  7. Serve warm.

Notes

For added flavor, marinate the chicken in salsa overnight before cooking. Experiment with different salsa varieties for flavor variations.
