  • – 2 teaspoons (10 ml) cumin
  • – 2 teaspoons (10 ml) paprika
  • – 3/4 teaspoon (4 ml) chili powder
  • – 2 tablespoons (30 ml) olive oil, divided
  • – 1 batch cilantro-lime rice or white rice or brown rice
  • – 1 (15-ounce) can black beans, drained, rinsed, and warm
  • – 1-1/2 cups (355 ml) frozen corn
  • – 1 large avocado, diced, or make guacamole
  • – Diced grape tomatoes or make salsa or pico de gallo
  • – Toppings as desired


Instructions

  1. Prepare your preferred rice—whether cilantro-lime, white, or brown—to make about 3 to 4 cups.
  2. Slice each chicken breast horizontally to form 4 thin pieces and gently flatten them with a meat mallet or frying pan to ensure uniform thickness. Dry the pieces and place them in a big bowl.
  3. Combine all the spices in a small bowl. Pour 1 tablespoon of oil over the chicken, mix well, sprinkle the spice blend over, and mix again.
  4. In a pan, heat the remaining oil on high. Arrange the chicken in a single layer without overlap and cook each side for 2 to 4 minutes until it reaches 165°F. After cooking, move the chicken to a plate and loosely cover it with foil. Let it rest for 5 minutes, then cut into cubes or slices.
