Ingredients

- – 2 teaspoons (10 ml) paprika
- – 3/4 teaspoon (4 ml) chili powder
- – 2 tablespoons (30 ml) olive oil, divided
- – 1 batch cilantro-lime rice or white rice or brown rice
- – 1 (15-ounce) can black beans, drained, rinsed, and warm
- – 1-1/2 cups (355 ml) frozen corn
- – 1 large avocado, diced, or make guacamole
- – Diced grape tomatoes or make salsa or pico de gallo
- – Toppings as desired
Instructions
- Prepare your preferred rice—whether cilantro-lime, white, or brown—to make about 3 to 4 cups.
- Slice each chicken breast horizontally to form 4 thin pieces and gently flatten them with a meat mallet or frying pan to ensure uniform thickness. Dry the pieces and place them in a big bowl.
- Combine all the spices in a small bowl. Pour 1 tablespoon of oil over the chicken, mix well, sprinkle the spice blend over, and mix again.
- In a pan, heat the remaining oil on high. Arrange the chicken in a single layer without overlap and cook each side for 2 to 4 minutes until it reaches 165°F. After cooking, move the chicken to a plate and loosely cover it with foil. Let it rest for 5 minutes, then cut into cubes or slices.
- Portion the rice into bowls. Evenly distribute the chicken, black beans, corn, avocado, and tomatoes among the bowls. Add any additional toppings you like. Enjoy your meal!
