A comforting and flavorful casserole made with shredded chicken, black beans, corn, and spices, topped with melted cheese.
Ingredients
- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup cooked brown rice or quinoa
- 1 cup salsa
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 cup diced bell peppers
- ½ cup diced onion
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine shredded chicken, black beans, corn, rice, salsa, cumin, chili powder, bell peppers, and onion. Season with salt and pepper.
- Transfer the mixture to a greased casserole dish and spread evenly.
- Sprinkle shredded cheese on top.
- Bake in the preheated oven for about 25-30 minutes, or until heated through and cheese is bubbly.
- Serve hot and enjoy!

For a crispier top, bake a few extra minutes while watching closely to avoid burning.
