Description

A comforting and flavorful casserole made with shredded chicken, black beans, corn, and spices, topped with melted cheese.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup cooked brown rice or quinoa
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup diced bell peppers
  • ½ cup diced onion
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine shredded chicken, black beans, corn, rice, salsa, cumin, chili powder, bell peppers, and onion. Season with salt and pepper.
  3. Transfer the mixture to a greased casserole dish and spread evenly.
  4. Sprinkle shredded cheese on top.
  5. Bake in the preheated oven for about 25-30 minutes, or until heated through and cheese is bubbly.
