Description

Delicious and easy-to-make chicken burritos packed with flavor, perfect for weeknight dinners.


Ingredients

  • 1 lb boneless skinless chicken thighs or breasts
  • 2 tbsp olive oil
  • 2 tbsp freshly squeezed lime juice
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 4 large flour tortillas
  • 2 cups cooked rice (white or brown)
  • 1 can (15 oz) black beans (rinsed & drained)
  • 1 cup shredded cheddar cheese
  • 1 cup pico de gallo (fresh)
  • ½ cup sour cream (or Greek yogurt)
  • 1 avocado (sliced or guacamole)
  • 1 cup shredded lettuce
  • 2 tbsp chopped fresh cilantro
  • Hot sauce (optional)
  • Pickled jalapeños (optional)
  • Cotija cheese (optional garnish)
  • Lime wedges (for serving)


Instructions

  1. Start by marinating the chicken. Combine olive oil, lime juice, cumin, chili powder, smoked paprika, garlic powder, salt, and black pepper in a bowl. Add chicken and coat it well with the marinade. Let it sit for at least 30 minutes.
  2. Preheat your grill or heat a pan over medium-high heat. Grill or pan-sear the chicken until cooked through, about 6-8 minutes per side for thighs or 5-7 minutes per side for breasts. Use a meat thermometer to check for 165°F internal temperature.
  3. While the chicken cooks, warm the tortillas in a dry skillet over low heat until soft and pliable.
  4. Once the chicken is done, allow it to rest for a few minutes before slicing it into bite-sized pieces.
  5. To assemble the burritos, lay a tortilla on a flat surface. Begin by layering with cooked rice, followed by black beans, sliced chicken, cheddar cheese, pico de gallo, sour cream, avocado, shredded lettuce, and chopped cilantro.
  6. Roll the burrito by folding in one side, then tuck the ends, and continue rolling. Repeat with remaining tortillas and filling.
  7. Cut the burritos in half to serve. Enjoy with optional toppings like hot sauce, pickled jalapeños, and crumbled Cotija cheese. Serve with lime wedges on the side.
