- – 2 tablespoons low sodium chicken broth (30ml)
- – 2 tablespoons balsamic vinegar (30ml)
- – 1 tablespoon olive oil (15ml)
- – 1 tablespoon (15 ml) basil pesto
- – 1 tablespoon honey (15ml)
- – 1 teaspoon (5 ml) corn starch
- – 2 cloves garlic (finely minced)
- – 1 teaspoon (5 ml) salt
- – 1/4 teaspoon (1 ml) black pepper
- – 2 cups cherry tomatoes (10.5 oz / 300g)
- – 1 cup shredded mozzarella cheese (or 4 slices fresh) (3.5 oz / 100g)
- – fresh basil
Instructions
- Set your oven to 425°F and apply a light layer of grease to a 9×13-inch baking dish.
- Lay the chicken breasts on a cutting board and cover them with plastic wrap. Utilize a meat mallet or small skillet to even out the thicker parts of the chicken for uniform thickness, ensuring even cooking.
- Arrange the chicken pieces in the greased baking dish.
- In a small mixing bowl, combine the broth, vinegar, olive oil, basil pesto, honey, cornstarch, minced garlic, salt, and pepper by whisking together thoroughly.
- Pour the prepared sauce over the chicken evenly. Scatter the cherry tomatoes around the chicken in the dish.
- Bake in the oven for 18 to 22 minutes, checking that the internal temperature of the chicken reaches 165°F for doneness. Time may vary based on the chicken’s thickness.
- Place mozzarella cheese atop each chicken breast.
- Switch the oven setting to broil and return the dish to the oven, broiling for an additional 1 to 2 minutes until the cheese is melted.
- Garnish with freshly chopped basil before serving.
Notes
- Evenly flatten the chicken breasts for consistent cooking.
- Use fresh basil as a garnish to elevate the dish’s flavors.
- Ensure the chicken reaches 165°F internally for proper doneness.
