Description

Crispy, golden burritos filled with savory chicken, gooey cheese, and seasoned beans, perfect for a comforting meal.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup refried beans
  • 1 tsp cumin
  • 1 tsp chili powder
  • 4 large flour tortillas
  • Oil for frying
  • Sour cream and salsa for serving


Instructions

  1. In a bowl, mix shredded chicken, cheese, refried beans, cumin, and chili powder.
  2. Spoon the mixture onto each tortilla and roll tightly.
  3. Heat oil in a pan over medium heat.
  4. Fry each chimichanga until golden and crispy, about 4-5 minutes on each side.
  5. Remove and drain on paper towels.
  6. Serve with sour cream and salsa on the side.

Notes
