Ingredients
- 2 cups cooked chicken, shredded
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1/2 cup refried beans
- 1 tsp cumin
- 1 tsp chili powder
- 4 large flour tortillas
- Oil for frying
- Sour cream and salsa for serving
Instructions
- In a bowl, mix shredded chicken, cheese, refried beans, cumin, and chili powder.
- Spoon the mixture onto each tortilla and roll tightly.
- Heat oil in a pan over medium heat.
- Fry each chimichanga until golden and crispy, about 4-5 minutes on each side.
- Remove and drain on paper towels.
- Serve with sour cream and salsa on the side.
Notes
