Description

A hearty Chicken Cordon Bleu Casserole that combines chicken, ham, and Swiss cheese in a creamy sauce for a comforting meal.


Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 8 oz cooked ham, diced
  • 8 oz Swiss cheese, shredded
  • 1 (10.75 oz) can condensed cream of chicken soup
  • ½ cup milk
  • ½ cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • ¼ cup chopped fresh parsley
  • 1 cup breadcrumbs (optional)
  • ¼ cup grated Parmesan cheese (optional)
  • 2 tablespoons melted butter (optional)


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. In a large skillet, heat olive oil over medium-high heat and add cubed chicken, salt, pepper, garlic powder, and onion powder. Cook until chicken is fully cooked and lightly browned, about 5-7 minutes.
  3. In a mixing bowl, whisk together cream of chicken soup, milk, mayonnaise, Dijon mustard, and Worcestershire sauce until smooth.
  4. Add the cooked chicken to the bowl with the soup mixture, then stir in diced ham and shredded Swiss cheese until well combined.
  5. Pour the mixture into the greased baking dish and spread it out evenly.
  6. If using, mix breadcrumbs, Parmesan cheese, and melted butter in a small bowl, then sprinkle over the casserole.
  7. Bake for 25-30 minutes, or until bubbly and golden brown. Let rest for 5-10 minutes before serving, garnished with fresh parsley.

Notes

For added flavor, marinate the chicken in olive oil and spices for about 30 minutes before cooking. Use Panko breadcrumbs for extra crunch.
