Ingredients

  • – 1 lb (454 g) chicken thighs, deboned and skin on
  • – 1 pinch salt
  • – black pepper
  • – 2 teaspoons (10 ml) olive oil
  • – 4 cloves garlic, minced
  • – 3 tablespoons (45 ml) honey
  • – 3 teaspoons (15 ml) mustard
  • – 1/4 cup (60 ml) water
  • – 1 pinch salt


Instructions

  1. Remove the bones from the chicken thighs, ensuring the skin remains intact. Season both sides with a little salt and pepper.
  2. Place a pan on medium heat and pour in half of the olive oil. Cook the chicken on both sides until thoroughly done. Remove any extra fat from the skin but keep the chicken juices. Put aside.
  3. In another pan, pour the remaining olive oil over medium heat and sauté the garlic until it starts to brown. Mix in the honey, mustard, water, and a pinch of salt, stirring until well blended.
  4. Pour the sauce into the skillet, increase the heat, and stir to coat the chicken thoroughly with the Honey Dijon mixture. Take off the heat and serve right away.
