Ingredients

  • 1 whole chicken
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 lemon, sliced
  • 4 garlic cloves, minced
  • Fresh herbs (rosemary, thyme, or parsley)
  • Chopped vegetables (carrots, potatoes, or broccoli)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rub the whole chicken with olive oil, salt, and pepper, ensuring it’s well coated.
  3. Stuff the cavity with lemon slices, minced garlic, and fresh herbs.
  4. Place the chicken in a roasting pan surrounded by your choice of chopped vegetables.
  5. Roast in the oven for about 1.5 hours or until the internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 10 minutes before carving and serving with the roasted vegetables.
