Ingredients
- 1 whole chicken
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 lemon, sliced
- 4 garlic cloves, minced
- Fresh herbs (rosemary, thyme, or parsley)
- Chopped vegetables (carrots, potatoes, or broccoli)
Instructions
- Preheat your oven to 375°F (190°C).
- Rub the whole chicken with olive oil, salt, and pepper, ensuring it’s well coated.
- Stuff the cavity with lemon slices, minced garlic, and fresh herbs.
- Place the chicken in a roasting pan surrounded by your choice of chopped vegetables.
- Roast in the oven for about 1.5 hours or until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 10 minutes before carving and serving with the roasted vegetables.
Notes
For best results, let the chicken marinate for a few hours or overnight. Reserve some of the herb mixture to sprinkle on the vegetables while roasting.
