  • 2 pounds chicken, shredded (900g)
  • 1 teaspoon (5 ml) salt
  • 1/2 teaspoon (3 ml) black pepper
  • 2 bay leaves
  • 1 tablespoon dried parsley (15ml)
  • 3 tablespoons cornstarch (45g)
  • 3 tablespoons water (45ml)
  • 1 1/2 cups all-purpose flour (180g)
  • 1 teaspoon (5 ml) baking powder
  • 1/2 teaspoon (3 ml) salt
  • 3 tablespoons unsalted butter, cold (45g)
  • 3/4 cup milk (180ml)


Instructions

  1. In a large pot with an 8-quart capacity, melt the butter before adding the onions, carrots, and celery. Stir the mixture until the onions become soft and see-through. Incorporate the garlic and continue cooking for an additional 30 seconds.
  2. Add the chicken broth and shredded chicken to the pot. Season with salt, pepper, bay leaves, and parsley. Allow the mixture to reach a boil, then lower the heat and let it simmer while you prepare the dumplings.
  3. In a separate large bowl, mix together the flour, baking powder, and salt. Use a cheese grater to shred the cold butter into the flour mixture, ensuring the butter is well-coated.
  4. Add the milk and mix until the dough comes together to form a ball. If necessary, knead the dough a few times within the bowl.
  5. Break off small, one-inch pieces of dough and drop them into the simmering soup. Cover the pot with a lid and let the soup cook for 15-20 minutes, or until the dumplings rise to the surface.
  6. To thicken the soup, blend the cornstarch with cold water and gradually add this mixture to the soup, stirring continuously until it thickens.
