- 2 bay leaves
- 1 tablespoon dried parsley (15ml)
- 3 tablespoons cornstarch (45g)
- 3 tablespoons water (45ml)
- 1 1/2 cups all-purpose flour (180g)
- 1 teaspoon (5 ml) baking powder
- 1/2 teaspoon (3 ml) salt
- 3 tablespoons unsalted butter, cold (45g)
- 3/4 cup milk (180ml)
Instructions
- In a large pot with an 8-quart capacity, melt the butter before adding the onions, carrots, and celery. Stir the mixture until the onions become soft and see-through. Incorporate the garlic and continue cooking for an additional 30 seconds.
- Add the chicken broth and shredded chicken to the pot. Season with salt, pepper, bay leaves, and parsley. Allow the mixture to reach a boil, then lower the heat and let it simmer while you prepare the dumplings.
- In a separate large bowl, mix together the flour, baking powder, and salt. Use a cheese grater to shred the cold butter into the flour mixture, ensuring the butter is well-coated.
- Add the milk and mix until the dough comes together to form a ball. If necessary, knead the dough a few times within the bowl.
- Break off small, one-inch pieces of dough and drop them into the simmering soup. Cover the pot with a lid and let the soup cook for 15-20 minutes, or until the dumplings rise to the surface.
- To thicken the soup, blend the cornstarch with cold water and gradually add this mixture to the soup, stirring continuously until it thickens.
