Ingredients
- 2 tbsp. vegetable oil (30 ml)
- 3 garlic cloves, finely chopped
- 1 jalapeño, seeded and finely chopped
- 1 large onion, diced
- 3 c. shredded cooked beef (720 g)
- 2 (4-ounce) cans diced green chiles
- 1/2 tsp (3 ml). paprika
- Salt, to taste
- Black pepper, to taste
- 3 (10-ounce) cans green enchilada sauce
- 2/3 c. plain yogurt (160 ml)
- 18 corn tortillas, cut in half
- 3 c. grated cheddar cheese (about 340 g)
- Fresh cilantro, chopped, for serving
Instructions
- Preheat your oven to 350°F.
- Warm the oil in a large skillet over medium heat. Sauté the garlic, jalapeño, and onion until they soften, approximately 3 minutes.
- Add the shredded beef, green chiles, paprika, and season with salt and black pepper to taste.
- Set aside 1/2 cup of the enchilada sauce, then pour the rest into the skillet and mix well. Heat through for 1 to 2 minutes.
- Turn off the burner and blend in the plain yogurt.
- Coat the bottom of a 9-by-13-inch baking dish with the reserved 1/2 cup enchilada sauce.
- Arrange 12 tortilla halves on the bottom, overlapping them as needed, then layer with one-third of the beef mixture and sprinkle with 1 cup of cheddar cheese.
- Repeat the process to form 2 more layers of tortillas, beef mixture, and cheese, creating a total of 3 layers.
- Bake until the dish is bubbling and the top is golden brown, about 30 to 35 minutes.
- Allow it to rest for 10 minutes.
- Before serving, generously top with chopped cilantro.
