Description

Delicious chicken enchiladas made with tender shredded chicken, enchilada sauce, and topped with gooey cheese, perfect for weeknight dinners or gatherings.


Ingredients

  • 2 cups shredded chicken
  • 1 cup cheese (your favorite type)
  • 1 cup enchilada sauce
  • 6 tortillas
  • Sour cream (for serving)
  • Avocado (for serving)
  • Fresh cilantro (for serving)


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix shredded chicken with enchilada sauce.
  3. Fill each tortilla with the chicken mixture and sprinkle with cheese.
  4. Roll the tortillas and place them seam-side down in a baking dish.
  5. Pour remaining enchilada sauce over the rolled tortillas and top with more cheese.
  6. Bake for 20-25 minutes until cheese is bubbly and golden.
