Description
Hearty chicken enchiladas made with tender shredded chicken, rich enchilada sauce, and gooey cheese wrapped in soft tortillas.
Ingredients
- 2 cups cooked chicken breast, shredded
- 2 cups homemade enchilada sauce
- 8 flour tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1/2 cup diced onions (optional)
- 1/2 cup chopped cilantro (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the shredded chicken with 1 cup of enchilada sauce and season with salt and pepper.
- Take a tortilla and fill it with the chicken mixture, adding some diced onions and cilantro if desired.
- Roll the tortilla tightly and place it seam-side down in a greased baking dish.
- Repeat with remaining tortillas.
- Pour the remaining enchilada sauce over the rolled enchiladas and sprinkle with cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
- Remove from oven and let it cool for a few minutes before serving. Enjoy!
Notes
Customize the filling with black beans or corn for added flavor and fiber. Garnish with fresh avocado slices or sour cream.
