Description

Hearty chicken enchiladas made with tender shredded chicken, rich enchilada sauce, and gooey cheese wrapped in soft tortillas.


Ingredients

  • 2 cups cooked chicken breast, shredded
  • 2 cups homemade enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1/2 cup diced onions (optional)
  • 1/2 cup chopped cilantro (optional)
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the shredded chicken with 1 cup of enchilada sauce and season with salt and pepper.
  3. Take a tortilla and fill it with the chicken mixture, adding some diced onions and cilantro if desired.
  4. Roll the tortilla tightly and place it seam-side down in a greased baking dish.
  5. Repeat with remaining tortillas.
  6. Pour the remaining enchilada sauce over the rolled enchiladas and sprinkle with cheese.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.
  8. Remove from oven and let it cool for a few minutes before serving. Enjoy!

Notes

Customize the filling with black beans or corn for added flavor and fiber. Garnish with fresh avocado slices or sour cream.
