Delicious chicken enchiladas filled with shredded chicken, zesty spices, and topped with homemade red sauce and melted cheese, perfect for a comforting family dinner.
Ingredients
- 2 cups cooked shredded chicken
- 8 flour or corn tortillas
- 2 cups shredded cheese (cheddar or Monterey Jack)
- 1 cup homemade red enchilada sauce
- 1/2 cup chopped onions
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- Salt to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté the onions until softened.
- Add the shredded chicken, cumin, garlic powder, and salt. Stir until well mixed and heated through.
- Spread a layer of red enchilada sauce in the bottom of a baking dish.
- Take a tortilla, fill it with a portion of the chicken mixture and some cheese, roll it up, and place it seam-side down in the baking dish.
- Repeat with the remaining tortillas.
- Once all the enchiladas are in the dish, pour the rest of the red enchilada sauce over the top and sprinkle with the remaining cheese.
- Cover with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh cilantro before serving.
Notes
For extra flavor, consider adding chopped bell peppers or jalapeños to the chicken mixture. Use rotisserie chicken for a quicker option.
