Description

Delicious chicken enchiladas filled with shredded chicken, zesty spices, and topped with homemade red sauce and melted cheese, perfect for a comforting family dinner.


Ingredients

  • 2 cups cooked shredded chicken
  • 8 flour or corn tortillas
  • 2 cups shredded cheese (cheddar or Monterey Jack)
  • 1 cup homemade red enchilada sauce
  • 1/2 cup chopped onions
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt to taste
  • Fresh cilantro for garnish (optional)


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté the onions until softened.
  3. Add the shredded chicken, cumin, garlic powder, and salt. Stir until well mixed and heated through.
  4. Spread a layer of red enchilada sauce in the bottom of a baking dish.
  5. Take a tortilla, fill it with a portion of the chicken mixture and some cheese, roll it up, and place it seam-side down in the baking dish.
  6. Repeat with the remaining tortillas.
  7. Once all the enchiladas are in the dish, pour the rest of the red enchilada sauce over the top and sprinkle with the remaining cheese.
  8. Cover with foil and bake for 20 minutes.
  9. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  10. Garnish with fresh cilantro before serving.

Notes

For extra flavor, consider adding chopped bell peppers or jalapeños to the chicken mixture. Use rotisserie chicken for a quicker option.
