Description

Delicious and easy-to-make chicken enchiladas with a combination of tender chicken, enchilada sauce, and melted cheese, perfect for any gathering.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent.
  3. Add the shredded chicken, garlic powder, ground cumin, salt, and pepper. Stir until combined.
  4. Spread a small amount of enchilada sauce on the bottom of a baking dish.
  5. Take a tortilla, fill it with the chicken mixture and some cheese, then roll it up and place it seam-side down in the baking dish.
  6. Repeat with all tortillas.
  7. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the remaining cheese.
  8. Bake for 20-25 minutes until the cheese is bubbly and golden.
  9. Garnish with fresh cilantro if desired and serve hot.

Notes

For vegetarian options, substitute chicken with beans, mushrooms, or roasted vegetables. Customize fillings and toppings to your preference.
