Delicious chicken enchiladas wrapped in tortillas and topped with a creamy sour cream white sauce and cheese, perfect for family gatherings.
Ingredients
- 2 cups shredded cooked chicken
- 8 tortillas
- 1 cup sour cream
- 1 cup white sauce
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 can green chilies (optional)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Chopped cilantro (for garnish)
Instructions
- In a bowl, combine the shredded chicken, garlic powder, onion powder, salt, and pepper. Mix well to coat the chicken in spices.
- Grab a tortilla, fill it with the chicken mixture, and roll it up tightly, placing it seam-side down in a greased baking dish.
- Continue this process until you fill all the tortillas.
- In a separate bowl, stir together the sour cream and white sauce, then pour it evenly over the rolled enchiladas.
- Sprinkle shredded cheese over the top.
- Bake for 20-25 minutes or until the cheese bubbles and turns a lovely golden color.
- Remove from the oven and garnish with chopped cilantro before serving.
Notes
For added flavor, mix green chilies into the chicken filling. Can be assembled a day ahead and stored in the refrigerator.
