Description

Delicious chicken enchiladas wrapped in tortillas and topped with a creamy sour cream white sauce and cheese, perfect for family gatherings.


Ingredients

  • 2 cups shredded cooked chicken
  • 8 tortillas
  • 1 cup sour cream
  • 1 cup white sauce
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 can green chilies (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped cilantro (for garnish)


Instructions

  1. In a bowl, combine the shredded chicken, garlic powder, onion powder, salt, and pepper. Mix well to coat the chicken in spices.
  2. Grab a tortilla, fill it with the chicken mixture, and roll it up tightly, placing it seam-side down in a greased baking dish.
  3. Continue this process until you fill all the tortillas.
  4. In a separate bowl, stir together the sour cream and white sauce, then pour it evenly over the rolled enchiladas.
  5. Sprinkle shredded cheese over the top.
  6. Bake for 20-25 minutes or until the cheese bubbles and turns a lovely golden color.
  7. Remove from the oven and garnish with chopped cilantro before serving.

Notes

For added flavor, mix green chilies into the chicken filling. Can be assembled a day ahead and stored in the refrigerator.
