Ingredients

  • – 1 pound (454 g) boneless, skinless chicken thighs or breasts
  • – 4 teaspoons (20 ml) olive oil
  • – 1-1/2 teaspoons (7.5 ml) apple cider vinegar
  • – 1 tablespoon (15 ml) chili powder
  • – 1 teaspoon (5 ml) paprika
  • – 1 teaspoon (5 ml) cumin
  • – 1 teaspoon (5 ml) garlic powder
  • – 1/2 teaspoon (2.5 ml) dried oregano
  • – 1/2 teaspoon (2.5 ml) onion powder
  • – 1/2 teaspoon (2.5 ml) salt
  • – 1/2 teaspoon (2.5 ml) pepper
  • – 1 large lime (optional)
  • – 2 large bell peppers, thinly sliced
  • – 1 large yellow onion, thinly sliced
  • – 2 tablespoons (30 ml) olive oil
  • – 1/4 teaspoon (1.25 ml) salt
  • – 1/4 teaspoon (1.25 ml) pepper
  • – Cilantro-lime rice or plain white rice
  • – Toppings as desired


Instructions

  1. Remove excess fat from the chicken pieces. Combine them in a bowl with 4 teaspoons of olive oil and apple cider vinegar. Use tongs to mix until well-coated. Sprinkle with chili powder, paprika, cumin, garlic powder, dried oregano, onion powder, salt, and pepper. Mix once more to ensure the chicken is thoroughly covered.
  2. Arrange the chicken with the smooth side facing down in a single layer in an air fryer basket. Cook in the air fryer at 400°F for 10–12 minutes or until the internal temperature reaches 160°F. Transfer to a cutting board and allow to rest for 5 minutes before slicing thinly. Optionally, drizzle lime juice over the chicken.
  3. Heat a large 12-inch nonstick skillet over medium-high heat. Pour in 2 tablespoons of olive oil. When the oil is hot, add the sliced bell peppers and onions in an even layer. Season with salt and pepper. Stir occasionally until they are soft and slightly charred, about 10–12 minutes. Transfer to a plate.
  4. Evenly distribute the cooked rice among four serving bowls. Add the sliced chicken and pepper-onion mixture to each bowl. Top with your chosen extras. Serve immediately and enjoy.
