Description

A hearty Chicken Fajita Casserole featuring juicy chicken breast, sautéed bell peppers, and zesty spices, perfect for family meals.


Ingredients

  • 1 lb chicken breast, diced
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 2 cups cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 tablespoons fajita seasoning
  • 1 can diced tomatoes
  • Salt and pepper to taste
  • Olive oil


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken and cook until browned.
  3. Add sliced bell pepper and onion; sauté until softened.
  4. Stir in the fajita seasoning, black beans, corn, and diced tomatoes. Cook for a few more minutes.
  5. In a large casserole dish, combine the cooked rice and chicken mixture. Stir to combine.
  6. Top with shredded cheese.
  7. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
