A quick and flavorful chicken fajita casserole combining vibrant peppers, creamy cheese, and seasoned chicken, perfect for busy weeknights.
Ingredients
- 1.5 lbs chicken breast, sliced
- 3 bell peppers (red, yellow, green), sliced
- 1 large onion, sliced
- 4 oz cream cheese, softened
- 1/2 cup sour cream
- 2 cups shredded cheddar cheese
- 2 tbsp olive oil
- 1 packet taco seasoning
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F and grease a baking dish to prepare for the casserole.
- Slice the chicken breast, bell peppers, and onion into thin strips for even cooking.
- Heat olive oil in a skillet over medium heat and cook the sliced chicken until lightly browned.
- Add the sliced bell peppers and onion to the skillet. Cook for an additional five minutes or until the vegetables are softened.
- Stir in the packet of taco seasoning and lime juice, tossing everything to coat well.
- In a separate bowl, mix the softened cream cheese and sour cream until the mixture is smooth and well combined.
- Transfer the cooked chicken and vegetable mixture into the greased baking dish. Then, spread the cream cheese and sour cream mixture evenly over the top.
- Sprinkle shredded cheddar cheese generously over the entire casserole.
- Bake the casserole for 20–25 minutes or until it turns golden and bubbly.
- Once done, remove from the oven, garnish, and serve hot to enjoy a hearty meal.
Notes
Consider adding jalapeños for extra heat or preparing the chicken and veggie mixture in advance to save time.
