Description

A quick and flavorful chicken fajita casserole combining vibrant peppers, creamy cheese, and seasoned chicken, perfect for busy weeknights.


Ingredients

  • 1.5 lbs chicken breast, sliced
  • 3 bell peppers (red, yellow, green), sliced
  • 1 large onion, sliced
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • 2 cups shredded cheddar cheese
  • 2 tbsp olive oil
  • 1 packet taco seasoning
  • Juice of 1 lime
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 375°F and grease a baking dish to prepare for the casserole.
  2. Slice the chicken breast, bell peppers, and onion into thin strips for even cooking.
  3. Heat olive oil in a skillet over medium heat and cook the sliced chicken until lightly browned.
  4. Add the sliced bell peppers and onion to the skillet. Cook for an additional five minutes or until the vegetables are softened.
  5. Stir in the packet of taco seasoning and lime juice, tossing everything to coat well.
  6. In a separate bowl, mix the softened cream cheese and sour cream until the mixture is smooth and well combined.
  7. Transfer the cooked chicken and vegetable mixture into the greased baking dish. Then, spread the cream cheese and sour cream mixture evenly over the top.
  8. Sprinkle shredded cheddar cheese generously over the entire casserole.
  9. Bake the casserole for 20–25 minutes or until it turns golden and bubbly.
  10. Once done, remove from the oven, garnish, and serve hot to enjoy a hearty meal.

Notes

Consider adding jalapeños for extra heat or preparing the chicken and veggie mixture in advance to save time.
