Ingredients
- 1 ½ pounds (680 g) chicken breasts skinless and boneless
- 2 tablespoon (30 ml) s fajita seasoning
- 1 tablespoon (15 ml) vegetable oil
- 2 medium bell peppers cut into strips
- 1 medium yellow onion sliced
- 1 1/2 cup (360 ml) s shredded cheese
- Fresh chopped cilantro for garnish
Instructions
- Set your oven to preheat at 400°F (200°C).
- In a baking dish, coat the chicken breasts with the fajita seasoning and vegetable oil, ensuring the mixture is evenly applied (using your hands works well).
- Arrange the strips of bell peppers and slices of onion over the seasoned chicken. Add a bit more seasoning and then cover with shredded cheese.
- Place the dish in the oven and bake the chicken casserole without a cover for 25-30 minutes.
- Once done, serve right away, adding freshly chopped cilantro as a garnish, if you like.
