Ingredients

  • 1 ½ pounds (680 g) chicken breasts skinless and boneless
  • 2 tablespoon (30 ml) s fajita seasoning
  • 1 tablespoon (15 ml) vegetable oil
  • 2 medium bell peppers cut into strips
  • 1 medium yellow onion sliced
  • 1 1/2 cup (360 ml) s shredded cheese
  • Fresh chopped cilantro for garnish


Instructions

  1. Set your oven to preheat at 400°F (200°C).
  2. In a baking dish, coat the chicken breasts with the fajita seasoning and vegetable oil, ensuring the mixture is evenly applied (using your hands works well).
  3. Arrange the strips of bell peppers and slices of onion over the seasoned chicken. Add a bit more seasoning and then cover with shredded cheese.
  4. Place the dish in the oven and bake the chicken casserole without a cover for 25-30 minutes.
  5. Once done, serve right away, adding freshly chopped cilantro as a garnish, if you like.
