Ingredients

Instructions
- Combine diced chicken, bell pepper, onion, fajita seasoning, olive oil, salt, and pepper in a large bowl.
- Heat a skillet over medium-high heat and add the chicken mixture. Cook until the chicken is cooked through and vegetables are tender, approximately 10-15 minutes.
- Divide the cooked rice or quinoa among meal prep containers.
- Top each with the cooked chicken fajita mixture.
- Add optional toppings like avocado, salsa, and lime if desired.
- Store in the refrigerator for up to 4 days and enjoy as a quick and healthy lunch.
Notes
